Celebrate the sunshine this week with a bite of something fresh and zesty. With totally healthy ingredients and no refined sugars whatsoever, the energy boost you’ll feel from these won’t be accompanied by a subsequent crash.
As we mentioned the other day in #36alive 187, studies show that whilst lemon zest is a great baking ingredient, it also has a few other surprisingly brilliant health benefits. It helps eradicate toxic elements from the body, thus reducing the risk of cancer. A mixture containing lemon peel was shown in a study to prevent and help reduce the volume and size of prostate tumours, and colon and breast cancers, and can prevent the spread of cancerous cells. It’s also been seen to help enhance self destruction of those cells.
Lemon zest is also high in vitamins C and A, potassium, calcium, beta carotene, folate and magnesium, so add a little to your meals to reap the benefits of this secretly super fruit!
(makes around 25 balls)
- 2 cups oats
- 1 cup dates
- the zest of 1 lemon
- 1 handful shredded coconut
- 1 tbsp coconut oil
- 3-4 tbsp honey
Add all ingredients to a food processor and blend!
If you have a small or delicate food processor (or are using one that isn’t yours), soak the dates in warm water for a few minutes first, and add them a few at a time.
Place in the fridge for a hour to fully set or eat straight away
